Technical notes

:

Sauvignon Blanc grapes were harvested by hand at 21.7°B.  The grapes were hand-sorted and crushed.  The must had skin contact for a few hours before it was pressed.  The grape juice settled in a tank and the next day the clear juice started its cold fermentation.  After fermentation the wine was stabilized, filtered, carbonated and bottled.
