Technical notes

:

Grapes were harvested by hand at 26°B.  Cold maceration was done for 48h at 10°C to capture the specific grape flavours and enhance the colour. The grapes were fermented for 10 days at 24°C on the skins until dry. Pumpovers were done for 30 minutes every 3 hours.   After malo-lactic fermentation, wine matured in French Oak barrels for 17 months.  Thereafter wine was stabilized and bottled.

Description

:

Deep rich colour, full bodied intense Cabernet Sauvignon aromas and well balanced oak flavours resulting in a long lasting finish. Enjoy now and will improve over the next 5years. Serve with roast leg of Karoo lamb, lamb cutlets or a hearty beef stew.
