Technical notes

:

Hanepoot grapes were harvested in Prince Albert at 25°B.  The grapes were hand-sorted and the temperature brought down to 10°C through the mash cooler.  The grapes had skin contact for 24h, before it was pressed.  The juice settled and the clear juice was racked and inoculated with yeast.  The must fermented down to 17°B, before it was fortified.  Wine was stabilized, filtered and bottled.
