Technical notes

:

Tinta Barocca grapes were harvested in Prince Albert at 26.1°B.  The grapes were hand-sorted and the temperature brought down to 10°C through the mash cooler.  The grapes had skin contact for 6 hours, before it was pressed.  The juice settled and the clear juice was racked and inoculated with yeast.  The must fermented down to 17°B, before it was fortified.  Wine was filtered and bottled.

Description

:

This coral coloured and fruity, fortified wine has lingering
smoothness and delicate aromas on the nose. Enjoy as an
aperitif.
